Resumen

Con el propósito de elaborar un plan de negocios para la puesta en marcha del restaurante Food Truck Samadhi en la ciudad de Cali, se planeó y desarrolló una investigación exploratoria para abordar el mercado: un estudio a través de encuestas a un grupo objetivo. A partir de este estudio se logró detectar la demanda del mercado, definir el segmento de potenciales clientes, determinar las percepciones y motivaciones de los consumidores frente a preferencias alimenticias, y en general, obtener información valiosa para la etapa de diseño y estructuración de los servicios y productos a ofrecer en el restaurante.


Abstract

With the purpose to make a bussiness plan for the start up of the Restaurant Food TruckSamadhiin Cali city, an investment was planned and developed to approach the market: an study through surveys to a target group. From this study was achieved detect the market demand, define the segment of potential markets, determine perceptions and motivations of consumers about food preferences and to get valuable information for the stage of design and structure about services and products to offer at restaurant.Later, were defined general characteristics of product/service whithin the languaje of naturalness freshness and modernity, so was structured the restaurant concept that will allow that the pleasure of enjoying snacks and gourmet appetizers do not limit to parties or social events, but that can be readyto enjoy any day with whom you want, friends or family, in a great, modern, light and cool environment; when combining that twoelements the restaurant terrace -Food Truck was born specialized about gourmet cool food since snacks to skewers and wraps that will have protein as its main protagonist including sauces and handmade dressings.Finally, through technical and financial analysis about the business was determined that viability and the future for the restaurant that will be located in one of the most recognized sectors of the city for the gastronomic positioning.
